It’s a healthy, low-calorie vegetable side dish that is rich in vitamins A and C.

Due to the heating process, the colorful bean pods turn from purple to green when they’re cooked.  Therefore, it is always better to eat these raw. Without cooking the beans, prepare your salad dressing and marinate the beans. Leave the beans in the dressing in the refrigerator overnight. They will be soft without cooking.

Organic Produce Delivery Blackberries


Blackberries abound in antioxidants, such as anthocyanin pigments, responsible for the purplish-black color of these berries and may impart health benefits because of their antioxidant properties. Additional antioxidants in blackberries are vitamin C and E, and ellagic acid.

All may provide protection against cancer and chronic disease. Cooking does not seem to destroy ellagic acid, so even blackberry jams and desserts retain ellagic acid health benefits.

Interestingly, blackberries are a natural source of salicylate, an active substance found in aspirin. Potential pain benefits have yet to be explored. Because of their many tiny seeds, blackberries are a great source of soluble fiber, such as pectin. 


Quick Purple String Beans Recipe


The best way to make purple string beans is to quickly blanch and chill them, then saute them quickly with carmelized onions or mushrooms, but the purple beans quickly turn green when they hit the hot water.

Purple and Green Bean Salad with Olives and Tomatoes Recipe

  • 3 cups mixed-colored string beans, trimmed
  • 2 1/2 cups cherry tomatoes, halved or sliced tomatoes
  • 1/3 cup pitted kalamata olives
  • 1 clove garlic, finely chopped
  • 1 sprig summer savory, chopped
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon red wine vinegar


Bring a medium pot of salted water to a boil. Cook beans until cooked through but firm, about 7 minutes; rinse with cold water. Mix remaining ingredients in a bowl; add beans and toss. Serve.

Note: Try not to cook the purple beans too long.

 String Bean Arugula Salad

  • 3/4 pound purple string beans, trimmed
  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic, peeled and pressed
  • 2 cups baby or regular arugula, trimmed and chopped
  • 1 teaspoon finely grated lemon zest
  • Salt and freshly ground black pepper


Heat the grill to medium-high.

In a large bowl, toss the string beans with the olive oil and garlic. Let the beans rest for 10 minutes or so, then place the beans on a large square of heavy-duty aluminum foil. Fold the foil over the beans and fold down the ends of the foil twice. Place the foil packet on the grill, seam side up, and grill for 25 to 30 minutes. Let the beans cool for a few minutes, then combine them in a roomy bowl with the arugula, lemon zest, and salt and pepper to taste, tossing until the arugula is wilted, 2 to 3 minutes.

Purple Green Bean Salad Recipe

Add to your bowl of Beans:
3/4 lb of Purple Green Beans
1/4 c Chive – chopped
1/4 c Purple Bell Pepper //or// another colored pepper – chopped
1/3 c Parsnip – finely grated
3 Tbsp fresh Dill – minced
Set your veggies aside, and move on to the next step.
Lemon Butter Sauce
You’ll need two bowls for this recipe
6 Macadamia Nuts – grated into a fine fluffy powder:
Place your grated nuts into a bowl and set them aside.
In a separate bowl add:
4 Tbsp Canola Oil //or// any kind of Oil that is mild in flavor – just not Olive Oil
3 Tsp Lemon Juice
1 heaping tsp Date Paste
3/4 tsp Apple Cider Vinegar
1/4 tsp Sea Salt
It’ll be a little lumpy, but that’s okay…
Now add 
All of your Fluffy Grated Macadamia Nuts
3 Tbsp Water
As you whisk in your Grated Macadamia fluff (and water) you will notice it dissolve into the liquid.
Step 3.
Putting it all together:
Add your Lemon Butter Sauce to your Bowl of Beans and Veggies, and mix it all together!
