<p style="text-align: center;">Ingredients: Cream : 200 ml SemiWhipped cream : 200 ml Coconut Cream : 100 ml Sugar : 50 gms Lychees : 100 gms, pureed Ginger : 1 tsp, grated Vanilla essence : few drops Gelatin : 6 leaves</p>
<ol>
<li>Soak Gelatin in cold water to soften and keep aside.</li>
<li>Take cream, coconut cream, sugar, ginger in a heavy saucepan and bring to light simmer, just till boiling for 10 mins.</li>
<li>Remove from heat and add the Lychee puree and vanilla.</li>
<li>Squeeze the excess water out of the gelatin and stir into the hot cream.</li>
<li>Allow the cream to cool completely.</li>
<li>Fold in the semi whipped cream and pour the mixture into moulds.</li>
<li>Cover with plastic wrap and refrigerate till fully set.</li>
<li>Serve with Mango Syrup and chopped lychees&#8230; errr&#8230; mine was actually Mango puree <img src='http://www.myorganicfoodclub.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>
<li>To serve, carefully pass a knife through the edges of the mould, and place the mould in warm water for few mins and then invert on to the serving plate.</li>

<p>1/3 cup Asian Vinaigrette (recommended: Newman&#8217;s Own) 2 tablespoons syrup from canned lychees1 scallion, finely chopped 1/2 teaspoon red pepper flakes1 teaspoon sesame seeds</p>
<h2>For Salad:</h2>
<p>1 (9-ounce) package baby spinach (recommended: Fresh Express) 1 (8-ounce) can sliced water chestnuts, drained and liquid reserved 1/2 (20-ounce) can lychees in syrup, juice reserved 1/4 cup real bacon crumbles2 large hard-boiled eggs, peeled and quartered Directions:In a jar or sealable container, combine vinaigrette and 2 tablespoons reserved lychee juice, scallion, red pepper flakes, and sesame seeds. Shake vigorously; set aside.Add spinach and water chestnuts to a large bowl. Add dressing and toss. Top with lychees, bacon bits, and eggs.</p>

<li>Add stock and bring to the boil. Add chicken or tofu and simmer for 4 minutes. Add green beans and sugar snap peas and simmer for 3–4 minutes or until chicken is cooked through. Stir in coconut milk powder and lychees and cook for 1 minute or until heated through.</li>

<p align="justify">1 can Lychees (drained and syrup reserved for the sauce)</p>
<p align="justify">1 Red Bell Pepper</p>
<p align="justify">1 Zucchini</p>
<p align="justify">1 Red Onion</p>
<p align="justify">1 Garlic clove</p>
<p align="justify">1 Red Chilli</p>
<p align="justify"><strong><em>The meatballs :</em></strong></p>
<p align="justify">500g Minced Pork</p>
<p align="justify">1 Egg</p>
<p align="justify">1/4 Tsp Salt</p>
<p align="justify">1 Tbsp Flour</p>
<p align="justify"><strong><em>The sauce :</em></strong></p>
<p align="justify">100ml Lychee syrup</p>
<p align="justify">65ml White Wine Vinegar</p>
<p align="justify">3 Tbsp Brown Sugar</p>
<p align="justify">2 Tsp grated fresh Ginger</p>
<p align="justify">65ml Tomato Ketchup</p>
<p align="justify">1/4 Tsp Salt</p>
<p align="justify">Ground black pepper</p>
<p align="justify">Marinate the minced pork for an hour. Form into balls with your palm.</p>
<p align="justify">Mix the ingredients for the sauce and bring it to a boil stirring all the time. Then simmer for 5 minutes. Set aside.</p>
<p align="justify">Lightly oil a frying pan and grill your meatballs on all sides till they are browned. The inside could still be pink as you would finish cooking them in the sauce.</p>

<p>Ingredients:</p>
<p>700 grams chicken meat,cut to bite-size pieces<br />
2 tbsp soy sauce<br />
1 tbsp salt<br />
1 tsp sesame oil<br />
1 tsp sugar<br />
4 tbsp corn flour to coat chicken<br />
2 cups oil for deep frying<br />
1 tsp chopped garlic<br />
1 tsp crushed ginger<br />
1 can lychee, drained, syrup reserved<br />
1 tsp red chilli flakes<br />
sliced spring onion</p>
<p><i>Sauce:</i><br />
1 cup lychee syrup<br />
2 tbsp tomato sauce<br />
1 tbsp corn flour, mixed with 1 tbsp water</p>
<p>Method:</p>
<p>Marinate chicken with soy sauce, salt, sesame oil and sugar for 30 minutes. Roll chicken in corn flour and deep-fry till golden brown. Set aside.</p>
<p>In another pan, heat 1tbsp oil over medium fire. Stir fry garlic and ginger for 1-2 minutes. Add sauce ingredients, and cook till sauce thickens.</p>
<p>Add the chicken, lychees and chillies. Mix well, and allow simmer for 3-5 minutes.</p>

<li>4 lobster tails or 4 boneless fillets of perch, snapper, grouper, cod or other white fish</li>
<li>¼ cup olive oil</li>
<li>2 teaspoons fresh  thyme</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon grated lemon peel</li>
<li>½ teaspoon black pepper</li>
<li>1 canned lychees with its juice</li>
<li>200 g fresh lychees</li>
<li>1 green onion</li>
<li>1 teaspoon chopped fresh ginger</li>
<li>1 teaspoon cornstarch</li>

<h3>Preparation Method:</h3>
<ol>
<li> Wash the fish then pad dry with paper towels.</li>
<li>In a bowl mix the olive oil, chopped lychess, the canned lychee and 1/2 of the can’s juice, thyme, lychee juice, salt, pepper and lemon peel. Add the fish fillets to the mixture,   coat them thoroughly with the marinade and leave it to marinate for 1 hour.</li>
<li>In a large pan fry add some oil then fry on both sides until nice golden-brown.</li>
<li>Add a tablespoon oil to a wok, when hot add the chopped green onion and ginger, stir fry for 30 seconds.</li>
<li>Add the lychee pieces from the marinade, the other half of the can’s juice, simmer for 1-2 minutes.</li>
<li>Dissolve the cornstarch into 100 ml water, then add to the wok stirring, and simmer for another 1 minute.</li>
<li>On the plates serve the perch beside boiled rice, add on top of the fish the lychee sauce. Garnish with some fresh lychees for the looks.</li>

1/2 teaspoon madras curry powder<br />
12 large scallops, day boat preferable, dried, foot removed<br />
2 shallots, minced<br />
1/4 cup 1/4-inch dice lychees<br />
1 cup Champagne<br />
4 tablespoons butter<br />
2 tablespoons chive batons, for garnish<br />
Kosher salt and freshly ground black pepper to taste<br />
Canola oil to cook</p>

<h3>Directions</h3>
<p>Pour lychee syrup into a small dish. In a pie plate, combine rice flour and curry powder. Season the scallops on both sides and dip in syrup and then flour/curry mix. In a saute pan over medium-high heat coated lightly with oil, sear the scallops until browned on both sides, about 1 1/2 minutes per side. Remove scallops to a plate. In same pan, add shallots and lychees, season and saute for 2 minutes.</p>
<p>Deglaze with Champagne and reduce by 75%. Whisk in butter, check for seasoning.</p>
<p>Plate scallops and spoon Champagne-butter sauce over. Garnish with chive batons.</p>

<li>3 egg yolks</li>
<li>20g sugar</li>
<li>3 egg whites</li>
<li>60g sugar</li>
<li>80g super fine flour</li>
<li>50g melted butter/corn oil</li>
<li>1 tbsp vanilla essence</li>

<h2>Method</h2>
<p>Grease the 8in round mould with melted butter or corn oil. To make Caramel, cook sugar and water until caramelized or till golden brown. (Do not stir the boiling syrup, only swirl the saucepan from time to time as to prevent crystallisation.) Remove the caramel from heat and pour it into the greased mould. Allow to set. To make Custard, warm up the coconut milk and fresh milk. In a mixing bowl, combine the eggs, yolks and sugar. Pour the warm milk into the egg mixture, mix well and strain to remove unwanted particles in the custard. Arrange the lychee halves on the caramelized mould before pouring in custard. To make the Sponge, whisk the egg yolks and 20g of sugar till thick and frothy. Put aside. Whisk the meringue, egg whites with 60g of sugar till stiff. Gently fold in the yolks and whites mixture. Sieve in the flour and lastly add in the melted butter/corn oil and vanilla. Mix well. Pour the light sponge batter onto the custard mixture. (It will float onto the surface if you have done your sponge right or will just sink to the bottom if you tend to over-mix your sponge batter). Steam bake the cake by placing the cake mould in a baking tray. Fill the tray with water about 1.5in deep. Bake at 170 degrees Celcius for 60 minutes. Remove the cake from the oven and let it stand for at least an hour before removing the cake from the mould. Serve chilled.</p>

<h2><em>Directions:</em></h2>
<ol>
<li>Preheat the oven to 350 degrees F. Brush the insides and tops of bread bowls with melted butter. Arrange bread bowls and lids, buttered side up, on the oven rack and bake until crispy, about 20 minutes. Take them out of oven and keep them warm.</li>
<li>Saute onions, leeks, garlic and shallots in butter over medium heat for about 25 minutes, stirring often. Mix in flour, then mix in sherry and bring the mixture to a boil. Boil five minutes or until thick, scraping the bottom occasionally. Pour in the stock, thyme and rosemary and boil.</li>
<li>Lower the heat to medium-low and simmer for 30 minutes. Pour in the cream and simmer for 15 minutes (the mixture will thicken). Season with salt and pepper. Ladle the soup into your bread bowls and top with the lids to serve.</li>

<p>SALSA INGREDIENTS</p>
<ul>
<li>2 cups diced tomatoes (6 to 8 plum tomatoes, seeds and membranes removed and discarded, cut into 1/2-inch pieces)</li>
<li>1 cup finely chopped onion</li>
<li>1 1/2 tablespoons minced jalapeño pepper (about one 3-inch pepper, with seeds and membranes discarded)</li>
<li>1 1/2 tablespoons fresh lime juice</li>
<li>2 teaspoons grated lime zest (from 2 to 3 limes)</li>
<li>Kosher salt</li>
<li>1/4 cup chopped cilantro</li>
</ul>
<p>SOUP INGREDIENTS</p>
<ul>
<li>2 tablespoons olive oil</li>
<li>1 cup chopped onion</li>
<li>1 tablespoon minced garlic</li>
<li>2 cups chicken stock</li>
<li>6 ripe medium avocados, peeled, pitted, and diced (reserve pits)</li>
<li>5 tablespoons fresh lime juice, plus more if needed</li>
<li>Kosher salt</li>
<li>1/2 teaspoon Tabasco sauce, plus extra for the garnish</li>
</ul>
<p>DIRECTIONS</p>
<p style="text-align: center;"><strong>To make salsa: </strong>Combine tomatoes, onion, minced jalapeño, lime juice and zest, and 1/2 teaspoon salt in a medium nonreactive bowl. Toss to mix. (Salsa can be prepared 6 hours ahead. Cover and refrigerate.)</p>
<p style="text-align: center;"><strong>To make soup:</strong> Heat oil in a large, heavy nonreactive pot set over medium heat. Add onion and cook, stirring, until softened and translucent, for 3 to 4 minutes. Add garlic and cook, stirring, for 1 minute more. Add stock, 2 cups water, avocados, lime juice, 1 teaspoon salt, and 1/2 teaspoon Tabasco; bring mixture to a simmer and cook for 5 minutes. Remove from heat.</p>
<p style="text-align: center;">Purée the soup in batches in a <a title="Vitamix" href="http://www.myorganicfoodclub.com/vitamix/" target="_blank">food processor</a>, blender, or food mill, and return soup to the pot. (Or use an immersion blender to purée the soup in the pot.) Don&#8217;t worry if the soup is quite thick at this point. Add reserved avocado pits to soup, then cool, cover, and refrigerate for 3 hours or overnight. After soup has chilled, you can thin it with cold water, using up to 1 cup (or more if needed), if soup is too thick. Taste soup and season with more salt and additional lime juice, as needed. (Chilled soups often need extra seasoning to intensify their flavor.)</p>
<p id="yiv1126313450post-22437" style="text-align: center;">When ready to serve, remove and discard pits from soup. Drain the excess liquid from the salsa and stir in cilantro; season salsa with additional salt, if desired. To serve, ladle chilled soup into 6 bowls. Garnish center of each serving with some salsa and a dash of <a href="http://www.tabasco.com/" target="_blank">Tabasco</a>.</p>

Continue to cook and stir over medium heat until liquid is absorbed. Add another 1/2 cup of the broth to the rice mixture, stirring constantly. Continue to cook and stir until the liquid is absorbed. Add remaining broth mixture, 1/2 cup at a time, cooking and stirring constantly just until rice is tender and the broth has been absorbed. (This should take about 20 minutes total.)</li>
<li>Stir in corn, cooked wild rice, the 1/2 cup cheese, the 2 tablespoons butter pieces and black pepper. Cook over low heat for 3 minutes, stirring occasionally.</li>
<li>Divide risotto among six shallow pasta dishes or bowls. Sprinkle risotto with the remaining cooked pancetta, shaved cheese and parsley. Makes 6 main-dish or 12 side-dish servings.</li>

<li>1 fresh poblano or Anaheim chile pepper* or 1 medium green sweet pepper</li>
<li>1 medium red, orange or yellow sweet pepper</li>
<li>2 cups grape and/or cherry tomatoes, halved or quartered or 4 medium tomatoes, seeded and coarsely chopped (2 cups)</li>
<li>1 cup fresh corn kernels; 1 cup frozen whole kernel corn, thawed or one 8.75-ounce can whole kernel corn, drained</li>
<li>1/4 cup finely chopped red onion or thinly sliced green onion</li>
<li>1/4 cup snipped fresh cilantro</li>
<li>1/2 teaspoon finely shredded lime peel</li>
<li>2 tablespoons lime juice</li>
<li>1 -2 cloves garlic, minced</li>
<li>1 teaspoon kosher salt or 1/2 teaspoon salt</li>
<li>1/8 teaspoon bottled hot pepper sauce or 1/4 teaspoon freshly ground black pepper</li>
<li>1 avocado, halved, seeded, peeled, and chopped</li>
<li>Baked Tortilla Chips (recipe below) or scoop-shaped tortilla or corn chips</li>

<ol>
<li>Place whole poblano and sweet pepper on a foil-lined baking sheet. Broil 4 inches from the heat for 7 to 10 minutes or until skins are bubbly and blackened, turning occasionally. Carefully bring the foil up and around the peppers to enclose. Let stand about 15 minutes or until cool enough to handle. Pull the skins off gently and slowly using a paring knife. Discard skins. Remove pepper stems, seeds, and membranes; discard. Chop the peppers.</li>
<li>For salsa: In a large bowl, combine chopped peppers, tomatoes, corn, red onion, cilantro, lime peel, lime juice, garlic, salt and hot pepper sauce. Cover and chill mixture 4 to 24 hours. Stir in avocado just before serving.</li>
<li>Serve with Baked Tortilla Chips. For a quick appetizer, make Speedy Bruschetta (recipe below). For a condiment, serve salsa with grilled chicken, steak, pork or fish. Makes about 6 cups, 24 (1/4-cup) servings.</li>

<p>For Pasta Dough:<br />
1 3/4 cup &#8220;00&#8243; flour or all-purpose flour<br />
1/4 teaspoon salt<br />
2 large eggs<br />
1/2 tablespoon water (or more or less as needed)</p>
<p>For Filling:<br />
2 cups corn kernels (cut from about 3 ears)<br />
2/3 cup whole milk ricotta cheese<br />
1 egg<br />
2 tablespoons heavy cream<br />
1/4 teaspoon salt<br />
1/4 teaspoon pepper<br />
1 tablespoon chopped fresh basil<br />
1 teaspoon chopped fresh oregano</p>
<p>For Sauce:<br />
1/2 cup white wine<br />
1/4 cup butter<br />
1/4 cup cream<br />
1/4 cup chopped mixed herbs (parsley, oregano, and basil)</p>

<p>To prepare pasta dough by hand, on a flat surface, sift the flour into a large pile; make a well in the center roughly the size of your fist. Add eggs to well along with 1/2 tablespoon of water and salt. With a fork, whisk the eggs, gradually incorporating the flour. Add more flour or water as needed, a teaspoon at a time, to form a firm dough. Knead dough for 2 to 3 minutes or until smooth.</p>
<p>Or, to make it with a stand mixer or food processor, place flour and salt in the work bowl. Add eggs and mix on medium speed or pulse until dough comes together in a ball. Switch to the dough hook/attachment and knead for 1 to 2 minutes, adding more water or flour as needed, a teaspoon at a time, to form a firm dough. Transfer to a lightly floured surface and knead by hand for 1 to 2 minutes or until smooth.</p>
<p>Wrap dough tightly in plastic wrap and let rest for 30 minutes before rolling out by hand or with a pasta roller and cutting into desired shape.</p>
<p>To prepare filling, place corn kernels in a food processor and pulse once or twice until coarsely chopped. Transfer to a bowl and stir in ricotta cheese, egg, cream, salt, pepper, and herbs.</p>
<p>To assemble ravioli, divide dough into quarters and roll each out into thin sheets with a pasta roller (I went up to the &#8220;6&#8243; thickness on my pasta attachment). Drop 1 teaspoon of filling into the center of each ravioli, spacing the centers evenly about 2-inches apart. Moisten the edges with water, and top with a second sheet of pasta dough and press to seal; cut apart using a ravioli cutter, or a knife and crimp edges with a fork to thoroughly seal. Ravioli can be made up to a day ahead of time; arrange in a single layer on baking sheets lined with parchment paper and sprinkled with cornmeal or semolina flour. Cover with plastic wrap and refrigerate until ready to cook. You can also freeze them in a similar way; transfer them to a zip top bag after completely frozen.</p>
<p>Working in batches, boil ravioli for 7 to 8 minutes (add 2 to 3 minutes if cooking from frozen) or until tender. Transfer with a slotted spoon to serving dishes, reserving 1/4 cup pasta water.</p>
<p>To prepare sauce, heat a skillet over medium heat. Add wine and simmer until reduced slightly, about 2 minutes. Add cream and butter and simmer until thickened, 3 to 5 minutes, whisking constantly to prevent cream from scorching. If needed, add reserved pasta water, 1 teaspoon at a time, until sauce is the consistency of thick cream. Stir in chopped herbs. Spoon over ravioli and top with parmesan cheese, if desired.</p>

Using a slotted spoon, remove pancetta and drain on paper towels, reserving drippings in pan. Reduce heat to medium. Add onion to reserved drippings; cook and stir until onion is tender.</li>
<li>Add rice to onion mixture in saucepan; cook and stir over medium heat about 3 minutes or until rice begins to brown. Stir in half of the cooked pancetta. Carefully add wine and crushed red pepper.</li>
<li>In a medium saucepan, bring broth to boiling; reduce heat and simmer. Slowly add 1 cup of the broth to the rice mixture, stirring constantly. Continue to cook and stir over medium heat until liquid is absorbed. Add another 1/2 cup of the broth to the rice mixture, stirring constantly. Continue to cook and stir until the liquid is absorbed. Add remaining broth mixture, 1/2 cup at a time, cooking and stirring constantly just until rice is tender and the broth has been absorbed. (This should take about 20 minutes total.)</li>
<li>Stir in corn, cooked wild rice, the 1/2 cup cheese, the 2 tablespoons butter pieces and black pepper. Cook over low heat for 3 minutes, stirring occasionally.</li>

Carefully bring the foil up and around the peppers to enclose. Let stand about 15 minutes or until cool enough to handle. Pull the skins off gently and slowly using a paring knife. Discard skins. Remove pepper stems, seeds, and membranes; discard. Chop the peppers.</li>

<p>This recipe is an absolute labor of love.  Add a little truffle oil into the filling and you&#8217;ll become a world famous chef (in your own kitchen)&#8230; Three ears is all it takes!</p>

<p><strong>YIELD:</strong> 4 to 5 servings (about 36 ravioli)</p>
</div>
<h3 id="ingredients">Ingredients:</h3>
<div>
<p>For Pasta Dough:<br />
1 3/4 cup &#8220;00&#8243; flour or all-purpose flour<br />
1/4 teaspoon salt<br />
2 large eggs<br />
1/2 tablespoon water (or more or less as needed)</p>
<p>For Filling:<br />
2 cups corn kernels (cut from about 3 ears)<br />
2/3 cup whole milk ricotta cheese<br />
1 egg<br />
2 tablespoons heavy cream<br />
1/4 teaspoon salt<br />
1/4 teaspoon pepper<br />
1 tablespoon chopped fresh basil<br />
1 teaspoon chopped fresh oregano</p>
<p>For Sauce:<br />
1/2 cup white wine<br />
1/4 cup butter<br />
1/4 cup cream<br />
1/4 cup chopped mixed herbs (parsley, oregano, and basil)</p>

<h3 id="directions">Directions:</h3>
<div>
<p>To prepare pasta dough by hand, on a flat surface, sift the flour into a large pile; make a well in the center roughly the size of your fist. Add eggs to well along with 1/2 tablespoon of water and salt. With a fork, whisk the eggs, gradually incorporating the flour. Add more flour or water as needed, a teaspoon at a time, to form a firm dough. Knead dough for 2 to 3 minutes or until smooth.</p>
<p>Or, to make it with a stand mixer or food processor, place flour and salt in the work bowl. Add eggs and mix on medium speed or pulse until dough comes together in a ball. Switch to the dough hook/attachment and knead for 1 to 2 minutes, adding more water or flour as needed, a teaspoon at a time, to form a firm dough. Transfer to a lightly floured surface and knead by hand for 1 to 2 minutes or until smooth.</p>
<p>Wrap dough tightly in plastic wrap and let rest for 30 minutes before rolling out by hand or with a pasta roller and cutting into desired shape.</p>
<p>To prepare filling, place corn kernels in a food processor and pulse once or twice until coarsely chopped. Transfer to a bowl and stir in ricotta cheese, egg, cream, salt, pepper, and herbs.</p>
<p>To assemble ravioli, divide dough into quarters and roll each out into thin sheets with a pasta roller (I went up to the &#8220;6&#8243; thickness on my pasta attachment). Drop 1 teaspoon of filling into the center of each ravioli, spacing the centers evenly about 2-inches apart. Moisten the edges with water, and top with a second sheet of pasta dough and press to seal; cut apart using a ravioli cutter, or a knife and crimp edges with a fork to thoroughly seal. Ravioli can be made up to a day ahead of time; arrange in a single layer on baking sheets lined with parchment paper and sprinkled with cornmeal or semolina flour. Cover with plastic wrap and refrigerate until ready to cook. You can also freeze them in a similar way; transfer them to a zip top bag after completely frozen.</p>
<p>Working in batches, boil ravioli for 7 to 8 minutes (add 2 to 3 minutes if cooking from frozen) or until tender. Transfer with a slotted spoon to serving dishes, reserving 1/4 cup pasta water.</p>
<p>To prepare sauce, heat a skillet over medium heat. Add wine and simmer until reduced slightly, about 2 minutes. Add cream and butter and simmer until thickened, 3 to 5 minutes, whisking constantly to prevent cream from scorching. If needed, add reserved pasta water, 1 teaspoon at a time, until sauce is the consistency of thick cream. Stir in chopped herbs. Spoon over ravioli and top with parmesan cheese, if desired.</p>

<ol>
<li>In a large saucepan, heat the 2 tablespoons butter and the oil over medium-high heat. Add pancetta; cook and stir about 8 minutes or until nicely browned. Using a slotted spoon, remove pancetta and drain on paper towels, reserving drippings in pan. Reduce heat to medium. Add onion to reserved drippings; cook and stir until onion is tender.</li>
<li>Add rice to onion mixture in saucepan; cook and stir over medium heat about 3 minutes or until rice begins to brown. Stir in half of the cooked pancetta. Carefully add wine and crushed red pepper.</li>
<li>In a medium saucepan, bring broth to boiling; reduce heat and simmer. Slowly add 1 cup of the broth to the rice mixture, stirring constantly. Continue to cook and stir over medium heat until liquid is absorbed. Add another 1/2 cup of the broth to the rice mixture, stirring constantly. Continue to cook and stir until the liquid is absorbed. Add remaining broth mixture, 1/2 cup at a time, cooking and stirring constantly just until rice is tender and the broth has been absorbed. (This should take about 20 minutes total.)</li>
<li>Stir in corn, cooked wild rice, the 1/2 cup cheese, the 2 tablespoons butter pieces and black pepper. Cook over low heat for 3 minutes, stirring occasionally.</li>
<li>Divide risotto among six shallow pasta dishes or bowls. Sprinkle risotto with the remaining cooked pancetta, shaved cheese and parsley. Makes 6 main-dish or 12 side-dish servings.</li>

<li>Place whole poblano and sweet pepper on a foil-lined baking sheet. Broil 4 inches from the heat for 7 to 10 minutes or until skins are bubbly and blackened, turning occasionally. Carefully bring the foil up and around the peppers to enclose. Let stand about 15 minutes or until cool enough to handle. Pull the skins off gently and slowly using a paring knife. Discard skins. Remove pepper stems, seeds, and membranes; discard. Chop the peppers.</li>
<li>For salsa: In a large bowl, combine chopped peppers, tomatoes, corn, red onion, cilantro, lime peel, lime juice, garlic, salt and hot pepper sauce. Cover and chill mixture 4 to 24 hours. Stir in avocado just before serving.</li>
<li>Serve with Baked Tortilla Chips. For a quick appetizer, make Speedy Bruschetta (recipe below). For a condiment, serve salsa with grilled chicken, steak, pork or fish. Makes about 6 cups, 24 (1/4-cup) servings.</li>
